Ingredients
4 x 150 grams Salmon
Salt and pepper
4 tbsp mentaiko
4 tbsp Kewpi mayo
1 tbsp lemon juice
4 tsp Temaki nori (cut into short, thin strips)
4 bowls of rice
2 tbsp spring onions – finely chopped
4 tsp Aji Goma Hijiki Furikake (optional)

Instructions
1. Season salmon with salt and pepper
2. Fry salmon to 1/3 done on each side over a non stick pan with no oil
3. Place salmon on plate and set aside
4. Mix mentaiko, mayonnaise and 1 tbsp of lemon juice in a bowl
5. Spread mentaiko mayonnaise mix thinly over each piece of salmon
6. Place salmon on rice, and sprinkle with nori and spring onions
Option: add Aji Goma Hijiki Furikake (sesame rice seasoning)
